Hi and welcome!
The eternal question . . . what's for dinner? It seems as though the next meal time is always marching relentlessly towards us and we are often thinking about what we're going to eat next. During family get-togethers, there can be a lot of eye-rolling from the boys as we girls plan what we're going to have for dinner while we're still eating lunch!
I love good food as much as the next person but I don't love spending a lot of time planning meals, shopping for food or in the kitchen. So it's a constant battle between wanting to produce a delicious meal and limiting the time needed to do it. These recipes are an attempt to win the battle. I am hoping they will deliver you good food with minimal effort and fuss, often using ingredients that you would normally have on hand without making extra trips to the supermarket (so no black truffle-infused lobster bisque garnished with edible gold leaf here).
I have started with a few of my easiest and most-cooked recipes but there will be many more to follow in the coming weeks and months.
