Easiest Jam Pastries Ever!

I always make a few of these when I have odd bits of pastry left over from making other dishes like quiches or pasties.  Or you can just use a frozen pastry sheet instead. 

Preparation time: 10 mins  + Cooking time: 25 minutes

Makes 12  to 16

 

You need

1 frozen sheet of puff pastry, defrosted (preferably butter puff pastry)

jam of your choice (apricot or strawberry are good)

icing sugar, optional

 

To Make

Preheat oven to 180 degrees Celsius and line a baking tray with baking paper.  Roll out your pastry sheet a little and then cut it into 4 quarters. Continue to roll out each quarter as thinly as possible (without tearing it) into a rough rectangle shape. 

Spread each quarter with a generous layer of jam using the back of a spoon. Roll up each rectangle of pastry from one long edge to the other. Then slice each roll on an angle into either 3 or 4 pieces depending on how long you want your finished pastries.  Place the pastries on to the lined baking tray and bake for approximately 20 to 25 minutes.

What your are aiming for is pastries that are crisp on the outside but a bit squidgy on the inside. Jam will ooze out on to the baking paper and burn during cooking but this tends to be left behind on the paper when you lift the pastries off onto a cooling rack. Be careful - the jam will be very hot.

To serve

Sprinkle with icing sugar if desired. These can be eaten warm or cold, on their own or dipped in whipped cream if you're feeling really decadent.
